These Gooey S’mores Cake Bars are a soft, chewy, and nostalgic dessert packed with layers of graham cracker crumbs, marshmallow crème, and melty chocolate chips—all held together with yellow cake mix. Perfectly golden and delicious, they’re ideal for parties, potlucks, or cozy nights in.

Ingredients

  • 1 box yellow cake mix (just the dry mix)
  • 1 large egg
  • 1/2 cup butter, melted
  • 1 cup graham cracker crumbs
  • 1 cup marshmallow crème (store-bought or homemade)
  • 1 1/2 cups milk chocolate chips
  • 1 1/2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, mix together the dry cake mix, egg, melted butter, and graham cracker crumbs until a thick dough forms.
  3. Press two-thirds of the dough into the bottom of the pan to form the crust.
  4. Spread marshmallow crème over the crust using a greased spoon or offset spatula.
  5. Sprinkle chocolate chips over the crème, then scatter mini marshmallows on top.
  6. Crumble the remaining dough over the top and press gently to secure.
  7. Bake for 20 minutes or until the top is golden and marshmallows are toasted.
  8. Cool completely before slicing into bars.
