Gordon Ramsay’s steak marinade transforms an everyday cut of beef into a tender, flavorful masterpiece with balsamic vinegar, soy sauce, rosemary, and garlic. Perfect for grilling or pan-searing, it’s bold, balanced, and incredibly easy to make.

Ingredients

  • 12 ounces steak (ribeye, sirloin, or NY strip)
  • 1/3 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary, finely chopped

Instructions

  1. In a bowl or resealable bag, whisk together balsamic vinegar, soy sauce, olive oil, garlic, and rosemary.
  2. Place steak in the marinade, ensuring it’s fully coated. Cover or seal and refrigerate for at least 30 minutes, preferably 2–4 hours.
  3. Remove steak from marinade 30 minutes before cooking to bring to room temperature. Pat dry with paper towels.
  4. Heat a skillet or grill to high. Cook steak for 3–4 minutes per side for medium-rare or to desired doneness.
  5. Let rest for 5 minutes before slicing and serving.

Notes

  • Add a teaspoon of Dijon mustard for extra tang.
  • A squeeze of citrus juice brightens the flavor.
  • Add red pepper flakes for mild heat.
  • Swap rosemary with thyme or oregano for variation.
  • Boil leftover marinade to use as a finishing glaze.
