Grandma’s Chewy Butterscotch Blondies are rich, golden dessert bars made with brown sugar and filled with sweet butterscotch chips. These chewy, soft-centered bars with crisp edges offer a nostalgic flavor that’s perfect for potlucks, holiday dessert trays, or a comforting homemade treat.

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups packed brown sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups butterscotch chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, mix melted butter and brown sugar until smooth.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until just combined.
  5. Fold in butterscotch chips evenly throughout the batter.
  6. Spread batter evenly in the prepared baking dish and smooth the top.
  7. Bake for 25–30 minutes or until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool in the pan for 10 minutes, then lift out and let cool completely before slicing into bars.

Notes

  • Stir in chopped walnuts or pecans for added texture and flavor.
  • Add chocolate chips or swirl in peanut butter for a creative twist.
  • Top with icing or toffee bits for a festive presentation.
  • Use a metal pan for best texture; adjust baking time for glass pans.
