Greek Beet Salad is a vibrant, earthy dish featuring sweet beets, tangy feta, and a bright lemon-olive oil dressing. It’s a refreshing Mediterranean-inspired salad that’s simple to make and full of flavor.

Ingredients

  • 34 cooked beets, peeled and sliced or cubed
  • 1/2 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or red wine vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley or dill, chopped

Instructions

  1. Peel and slice or cube the cooked beets. Place them in a serving bowl.
  2. Add the thinly sliced red onion, minced garlic, and dried oregano to the bowl.
  3. In a small bowl, whisk together olive oil, lemon juice or vinegar, salt, and black pepper.
  4. Pour the dressing over the beet mixture and toss gently to coat evenly.
  5. Crumble feta cheese over the top and sprinkle with chopped parsley or dill just before serving.

Notes

  • Add chopped walnuts for extra crunch.
  • Use canned beets for convenience—just rinse and drain them well.
  • Serve chilled or at room temperature for best flavor.
