A fresh and flavorful Greek-inspired chicken bowl made with marinated grilled chicken, crisp vegetables, mozzarella pearls, and creamy tzatziki. It’s a satisfying and balanced meal perfect for lunch or dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 4 cups romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup mozzarella pearls
  • 1/2 cup tzatziki sauce
  • Fresh parsley or dill, optional for garnish

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes.
  2. Heat a skillet or grill pan over medium heat. Cook the chicken for 5–7 minutes per side or until fully cooked and golden brown. Let rest before slicing.
  3. While the chicken cooks, prepare the salad by combining greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  4. To assemble, divide the salad into bowls. Top with sliced chicken and mozzarella pearls.
  5. Add a generous spoonful of tzatziki to each bowl and garnish with fresh parsley or dill if desired.
  6. Serve immediately or store components separately for later assembly.
