Green Bean and Feta Salad is a fresh, vibrant dish featuring crisp green beans, tangy feta, and a zesty olive oil dressing. It’s quick to prepare and ideal for any meal, whether served warm or chilled.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 1/3 cup crumbled feta cheese
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or red wine vinegar
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add green beans and cook for 3–4 minutes until just tender and bright green.
  2. Drain and rinse green beans under cold water to stop cooking. Pat dry if needed.
  3. In a large bowl, combine green beans and sliced red onion.
  4. In a small bowl, whisk together olive oil, lemon juice or vinegar, garlic, salt, and pepper.
  5. Pour the dressing over the green beans and toss gently to coat.
  6. Top with crumbled feta and toss lightly again just before serving.

Notes

  • Add cherry tomatoes or olives for a Mediterranean twist.
  • Mix in toasted almonds or walnuts for extra crunch.
  • Use block feta and crumble it yourself for the best flavor.
