Ingredients

  • 1 lb ground beef (85% lean)
  • 2 tbsp olive oil
  • 1 packet taco seasoning or homemade mix
  • 1/2 cup water
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar or Mexican blend cheese (plus extra for crust)
  • 1/2 cup sour cream
  • 1/2 cup cooked rice (optional)
  • 1/2 cup refried beans or black beans (optional)
  • Hot sauce or salsa, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  2. Drain excess fat, then stir in taco seasoning and water. Simmer for about 5 minutes until coated and liquid reduces.
  3. Lay out tortillas. Fill each with cheese, seasoned beef, and any extras like beans or rice. Add sour cream and hot sauce.
  4. Fold in sides of tortilla and roll tightly into a burrito.
  5. In a clean skillet, sprinkle cheese directly onto the pan. Place burrito seam-side down on the cheese. Press gently and cook 2–3 minutes until a crispy crust forms.
  6. Flip and grill the other side until golden and crispy.
  7. Cool for 1 minute before slicing and serving.

  • Mix in chipotle, jalapeños, or sautéed onions/peppers for extra flavor.
