Ingredients

    • For the grilled chicken:
    • 4 boneless, skinless chicken breasts or thighs
    • 2 tbsp olive oil
    • 1 tsp garlic powder
    • 1 tsp paprika
    • 1/2 tsp cumin
    • 1/2 tsp chili powder
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 2 tbsp lime juice

  • For the avocado salsa:
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh cilantro, chopped
  • 1 jalapeño, minced (optional)
  • 2 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. In a bowl, mix olive oil, lime juice, garlic powder, paprika, cumin, chili powder, salt, and pepper. Coat chicken in the mixture and marinate for at least 20 minutes.
  2. Heat grill or grill pan to medium-high. Grill chicken for 6–8 minutes per side until fully cooked. Let rest before slicing.
  3. In a bowl, combine avocado, cherry tomatoes, red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper. Toss gently.
  4. Slice grilled chicken and top with avocado salsa. Serve with rice, tortillas, or salad as desired.

Notes

  • Use chicken thighs for juicier meat.
  • Add corn or black beans to the salsa for extra texture.
  • Top with cotija or feta cheese for added richness.
  • Grill extra chicken for easy meal prep lunches.
