Ingredients

  • 2 Mahi Mahi filets
  • Olive oil
  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Unsalted butter, melted
  • Fresh parsley or cilantro
  • Grilled lemon wedges (for serving)

Instructions

  1. Brush both sides of the Mahi Mahi filets with olive oil.
  2. Mix salt, garlic powder, onion powder, smoked paprika, and black pepper in a small bowl.
  3. Rub seasoning mixture over the fish filets.
  4. Preheat grill to medium-high and oil grates to prevent sticking.
  5. Grill filets flesh-side down for 3–5 minutes per side, flipping once, until internal temp reaches 145°F–160°F and fish flakes easily.
  6. Remove from grill and brush with melted butter.
  7. Serve hot with parsley or cilantro garnish and grilled lemon wedges.

Notes

  • Use Cajun seasoning for a spicy kick.
  • Try lemon-pepper for citrusy brightness.
  • Substitute swordfish, halibut, or snapper for similar results.
  • Add brown sugar and chili powder for a tropical sweet-spicy twist.
  • Cook skin-on for easier grilling, remove before serving if desired.
