Ingredients

  • 12 fresh oysters in the shell, scrubbed clean
  • 1/2 cup unsalted butter
  • 23 garlic cloves, finely minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Lemon wedges, for serving
  • Hot sauce (optional, for serving)

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small saucepan, melt butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant. Remove from heat and stir in parsley, lemon juice, salt, and black pepper.
  3. Shuck the oysters carefully, keeping the oyster in the deeper shell and preserving the natural juices. Discard the top shell.
  4. Place oysters shell-side down directly on the grill. Spoon garlic butter over each one.
  5. Close the lid and grill for 5–7 minutes, until butter is bubbling and oysters are just cooked through.
  6. Transfer to a platter and serve immediately with lemon wedges and hot sauce if desired.

  • Add grated Parmesan or breadcrumbs before grilling for extra richness.
  • Mix red pepper flakes into garlic butter for spice.
