Ground Beef and Potatoes is a hearty, one-skillet meal combining seasoned ground beef with crispy potatoes for a quick, satisfying, and budget-friendly dinner.

Ingredients

  • 1 lb ground beef
  • 3 medium potatoes (russet or Yukon gold), diced small
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or butter
  • Optional: 1/2 teaspoon dried thyme, 1/4 teaspoon chili flakes, chopped parsley, shredded cheese, or 1 bell pepper (diced)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
  3. In the same skillet, add a bit more oil if needed and sauté onions until soft, then stir in the garlic.
  4. Add ground beef, breaking it apart as it cooks. Season with salt, pepper, and paprika.
  5. Once the beef is browned and fully cooked, return the potatoes to the skillet and toss to combine.
  6. Cook for another 2–3 minutes to let the flavors meld and crisp up slightly.
  7. Serve hot, optionally garnished with fresh herbs or shredded cheese.

  • Use parboiled potatoes for faster and crispier results.
  • Customize with veggies like bell peppers or peas.
  • Top with a fried egg or cheese for extra richness.
