A bold and flavorful dish featuring spicy harissa ground beef served over lightly sautéed carrot noodles for a vibrant and satisfying meal.

Ingredients

  • 1 pound ground beef
  • 4 large carrots, spiralized into noodles
  • 2 tablespoons harissa paste
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup plain yogurt (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add harissa paste, ground cumin, smoked paprika, salt, and black pepper. Stir well to coat the beef evenly.
  5. Cook for an additional 3–4 minutes to allow the flavors to develop.
  6. In a separate pan, lightly sauté the carrot noodles with a small drizzle of olive oil for 2–3 minutes until slightly tender but still firm.
  7. Squeeze fresh lemon juice over the beef and stir to combine.
  8. Serve the harissa beef over the carrot noodles and garnish with chopped parsley or cilantro.
  9. Add a spoonful of plain yogurt on top if desired.
