Healthy Chocolate-Covered Raspberry Bites are a quick, no-bake treat made with fresh raspberries and dark chocolate. They’re naturally sweet, fruity, and indulgent while still being light and better-for-you—perfect as a snack or dessert.

Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup dark chocolate chips or chopped dark chocolate (70% cacao or higher)
  • 1 tsp coconut oil (optional)
  • Optional toppings: crushed nuts, shredded coconut, sea salt, freeze-dried raspberries

Instructions

  1. Rinse and thoroughly dry the raspberries.
  2. Melt dark chocolate with coconut oil (if using) in the microwave or over a double boiler until smooth.
  3. Dip each raspberry into the melted chocolate using a fork or toothpick, coating fully or partially.
  4. Place dipped raspberries on a parchment-lined tray.
  5. Sprinkle with optional toppings before chocolate sets.
  6. Refrigerate or freeze for 15–20 minutes until chocolate hardens.
  7. Serve immediately or store in an airtight container in the fridge or freezer.

Notes

  • Fill raspberries with nut butter or chocolate for added flavor.
  • Use milk or white chocolate for a sweeter version.
  • Try frozen raspberries for an ultra-cold treat.
