Healthy Crock Pot Korean Beef is a flavorful, slow-cooked dish made with lean beef and a savory-sweet Korean-inspired sauce. It’s easy to prepare and pairs perfectly with fresh, wholesome side dishes.

Ingredients

  • 1.5 lbs lean beef (flank steak or sirloin), thinly sliced
  • 1/2 cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced or grated
  • 3 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1/2 cup water or beef broth
  • 2 green onions, chopped
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 tbsp water (for cornstarch slurry)
  • 1 tsp sesame seeds (optional, for garnish)

Instructions

  1. Place the thinly sliced beef into the crock pot.
  2. In a bowl, whisk together soy sauce, garlic, ginger, honey, sesame oil, rice vinegar, and water or broth.
  3. Pour the sauce over the beef and stir to coat evenly.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until beef is tender.
  5. If using, mix cornstarch with 1 tablespoon of water to create a slurry and stir into the crock pot during the last 30 minutes to thicken the sauce.
  6. Before serving, garnish with chopped green onions and sesame seeds if desired.
