Ingredients
2 cups rolled oats
1 cup natural peanut butter
0.5 cup honey or maple syrup
2 large eggs
1 tsp vanilla extract
1 tsp baking soda
0.5 tsp salt
0.5 cup dark chocolate chunks or peanut butter chips
0.25 cup chopped peanuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
In a large bowl, mix the peanut butter and honey until smooth.
Beat in the eggs and vanilla extract.
Stir in the rolled oats, baking soda, and salt until well combined.
Fold in chocolate chunks and chopped peanuts if using.
Press the mixture evenly into the prepared baking dish and smooth the top.
Bake for 18–22 minutes, until the edges are set and the center is lightly golden.
Allow to cool completely before slicing into 12 bars.
