These healthy strawberry oatmeal bars are a wholesome snack or breakfast treat made with oats, fresh strawberries, and natural sweeteners. They’re easy to prepare, customizable, and perfect for meal prep.

Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour or almond flour
  • 1/3 cup honey or maple syrup
  • 1/3 cup melted coconut oil or unsalted butter
  • 1 1/2 cups fresh strawberries, chopped (or frozen and thawed)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: 1 tsp flour or cornstarch if strawberries are very juicy

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the oats, flour, baking soda, and salt.
  3. Stir in the melted coconut oil and honey (or maple syrup) until a crumbly mixture forms.
  4. Press about two-thirds of the mixture into the bottom of the baking dish to form the crust.
  5. In another bowl, mix the chopped strawberries, lemon juice, and vanilla extract. If very juicy, toss with a bit of flour or cornstarch.
  6. Spread the strawberry mixture evenly over the crust.
  7. Sprinkle the remaining oat mixture on top as a crumble.
  8. Bake for 30–35 minutes until the top is golden and the filling is bubbly.
  9. Let the bars cool completely before slicing to help them hold together.

Notes

  • Use gluten-free oats and almond flour for a gluten-free version.
  • Swap strawberries with other berries like blueberries or raspberries.
  • Add a pinch of cinnamon for extra flavor.
  • Top with Greek yogurt or nut butter when serving.
  • Store in the fridge for up to 5 days or freeze for up to 3 months.
