Ingredients

  • 1 1/2 cups cottage cheese (full-fat or low-fat)
  • 1/2 cup giardiniera (mild or hot), finely chopped
  • 1 clove garlic or 1/4 tsp garlic powder
  • 1 tbsp lemon juice
  • 1 tbsp olive oil (plus more for drizzling)
  • Salt and pepper to taste
  • Optional: 1 tbsp fresh parsley or chives, chopped (for garnish)

Instructions

  1. In a food processor or blender, combine cottage cheese, garlic, lemon juice, and 1 tbsp olive oil.
  2. Blend until smooth and creamy, scraping down the sides as needed.
  3. Stir in the finely chopped giardiniera by hand to keep the texture.
  4. Season with salt and pepper to taste.
  5. Transfer to a bowl, drizzle with olive oil, and garnish with fresh herbs if using.
  6. Chill for at least 15 minutes before serving for best flavor.
