This Hobo Casserole is a hearty, comforting layered dish made with seasoned ground beef, sliced potatoes, creamy soup, and melty cheddar cheese. It’s a simple, budget-friendly meal perfect for busy nights and family dinners.

Ingredients

  • 1 lb ground beef
  • 45 russet potatoes, thinly sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1 tbsp butter or oil (for greasing dish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or oil.
  2. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat and season with salt, pepper, and paprika if using.
  3. Wash, peel, and thinly slice potatoes (about 1/8-inch thick).
  4. In a bowl, mix cream of mushroom soup with milk until smooth.
  5. Layer half the potatoes in the baking dish, followed by half the beef mixture. Repeat with remaining potatoes and beef.
  6. Pour the soup mixture evenly over the casserole layers.
  7. Cover tightly with foil and bake for 60 minutes, or until potatoes are tender.
  8. Remove foil, top with shredded cheddar cheese, and bake uncovered for 10–15 more minutes until cheese is melted and bubbly.
  9. Let rest for a few minutes before serving.
