Ingredients

  • 1½ cups water
  • 2 black tea bags or 2 teaspoons loose-leaf black tea
  • 1½ cups milk (dairy or plant-based)
  • 1 cinnamon stick
  • 4 cardamom pods, lightly crushed
  • 3 whole cloves
  • 4 black peppercorns
  • 3 slices fresh ginger
  • 1 star anise (optional)
  • ½ teaspoon vanilla extract (optional)
  • 23 teaspoons sweetener of choice (honey, sugar, maple syrup, etc.)

Instructions

  1. In a small saucepan, combine water, cinnamon, cardamom, cloves, peppercorns, ginger, and star anise if using.
  2. Bring to a boil, then reduce heat and simmer for 10 minutes to infuse the flavors.
  3. Add tea bags or loose tea and steep for 3–5 minutes, depending on desired strength.
  4. Stir in milk and sweetener. Simmer gently for 2–3 more minutes.
  5. Strain into mugs and stir in vanilla extract if using.
  6. Serve hot, optionally topped with a sprinkle of cinnamon.

Notes

  • Use rooibos tea for a caffeine-free version.
  • Oat milk creates a creamy, plant-based chai latte.
  • Add extra ginger or a pinch of cayenne for more spice.
  • Blend with frothy milk for a café-style drink.
  • Leftover chai can be stored in the fridge for 3 days and reheated.
