  • 1 bay leaf
  • 5 cups chicken or vegetable broth
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 eggs, lightly beaten (optional)
  • 1/4 cup grated Parmesan or Gruyère cheese (optional)
  • Toasted baguette slices or stale bread (optional, for serving)
  • Fresh parsley or extra cheese for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add garlic (and onion if using) and sauté gently until softened and golden but not browned, about 5–7 minutes.
  3. Stir in thyme and bay leaf, then pour in the broth. Bring to a gentle simmer.
  4. Simmer uncovered for 25–30 minutes, allowing flavors to develop and garlic to mellow.
  5. Season with salt and pepper to taste.
  6. Optional: Slowly drizzle the beaten eggs into the soup while stirring to create ribbons, similar to egg drop soup.
  7. If desired, stir in grated cheese or ladle soup over toasted bread topped with melted cheese.
  8. Serve hot, garnished with fresh parsley or additional cheese if desired.
