This Honey Cranberry Chicken Bake with Ricotta Cheese is a cozy, sweet-and-savory dish featuring tender chicken, juicy cranberries, creamy ricotta, and a drizzle of golden honey—all baked together for a unique and elegant one-dish meal.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 cup fresh or 3/4 cup dried cranberries (soaked if dried)
  • 1/4 cup honey
  • 1/2 cup ricotta cheese
  • 12 sprigs fresh rosemary or thyme (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken with salt and pepper on both sides.
  3. In a skillet or directly in the baking dish, heat olive oil and sauté garlic until fragrant.
  4. Place chicken in the dish and scatter cranberries around it. If using dried cranberries, soak them in warm water for 10 minutes first.
  5. Drizzle honey over the chicken and cranberries, then add dollops of ricotta cheese around the dish.
  6. Top with rosemary or thyme if using.
  7. Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  8. Let rest for a few minutes, then spoon pan juices over each piece before serving.
