Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp water
  • 1 tsp cornstarch (optional)
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • 1/2 cup heavy cream or half-and-half
  • 2 tbsp butter
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 cup grated parmesan cheese (optional)

Instructions

  1. Cook rice in chicken broth or water according to package instructions until tender and fluffy.
  2. Once cooked, stir in butter, cream, salt, garlic powder, and parmesan (if using). Keep warm.
  3. Season chicken pieces with salt, pepper, and garlic powder.
  4. Heat olive oil in a skillet over medium-high heat. Add chicken in a single layer and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  5. In the same skillet, sauté minced garlic for 1 minute. Add honey, soy sauce, and water. Simmer until slightly thickened.
  6. If desired, mix cornstarch with a little water and stir into the sauce for extra thickness.
  7. Return chicken to the skillet and toss in the sauce until well coated.
  8. Serve chicken bites over creamy rice. Garnish with chopped parsley or green onions if desired.

Notes

  • Use boneless chicken thighs for extra juiciness.
  • Add red pepper flakes for a spicy kick.
  • Use coconut milk for a dairy-free creamy rice option.
  • Leftover rice can be reheated with a splash of broth or cream.
  • Tofu or shrimp can replace chicken for variation.
