Ingredients
1.5 lb boneless, skinless chicken thighs or breasts
0.25 cup honey
1 tbsp fresh ginger, grated
3 cloves garlic, minced
0.25 cup soy sauce
2 tbsp rice vinegar
1 tbsp olive oil
0.5 tsp salt
0.5 tsp black pepper
3 cups cooked rice or grain of choice
2 cups steamed broccoli
1 cup shredded carrots
1 cup sliced cucumber
0.25 cup sliced green onions
1 tbsp sesame seeds
0.75 cup mayonnaise
2 tbsp ketchup
1 tbsp rice vinegar (for sauce)
0.5 tsp paprika
0.5 tsp garlic powder
1 tsp sugar
Instructions
In a bowl, whisk together honey, ginger, garlic, soy sauce, rice vinegar, olive oil, salt, and black pepper.
Add the chicken to the marinade and let it sit briefly while preparing other ingredients.
Heat a skillet over medium heat and cook the chicken until golden and cooked through, turning occasionally and allowing the sauce to thicken into a glaze.
Remove the chicken from the pan and slice into bite-sized pieces.
In a separate bowl, mix mayonnaise, ketchup, rice vinegar, paprika, garlic powder, and sugar until smooth to make the yum yum sauce.
Assemble bowls by adding rice to the base.
Top with glazed chicken, broccoli, carrots, and cucumber.
Drizzle generously with yum yum sauce.
Garnish with green onions and sesame seeds before serving.
Notes
Great for meal prep—store components separately.
Add sriracha or chili flakes for extra heat.
Swap rice for quinoa or cauliflower rice if desired.
Use dairy-free mayonnaise to keep the sauce dairy-free.
