Tender carrots and crisp green beans coated in a glossy honey butter glaze for a lightly sweet and savory side dish that’s fresh, colorful, and comforting.

Ingredients

  • 2 cups sliced carrots
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Bring a pot of salted water to a boil and blanch the carrots for 3 minutes.
  2. Add the green beans and cook for another 2–3 minutes until just tender.
  3. Drain the vegetables and set aside.
  4. In a large skillet over medium heat, melt the butter.
  5. Stir in the honey and let it warm gently.
  6. Add the carrots and green beans, tossing to coat evenly.
  7. Cook for 4–5 minutes until the glaze slightly thickens and vegetables are heated through.
  8. Season with salt, black pepper, and lemon juice.
  9. Sprinkle with fresh parsley before serving if desired.
