Instructions

  1. Marinate the Chicken: In a bowl, whisk together honey, lime juice and zest, olive oil, garlic, chili flakes, salt, and pepper. Toss diced chicken in the marinade, cover, and refrigerate for 15–30 minutes.
  2. Cook the Rice: Prepare rice according to package instructions. Set aside and keep warm.
  3. Sear the Chicken: Heat a skillet over medium-high heat. Add chicken with some marinade. Cook 8–10 minutes, stirring occasionally, until cooked through and caramelized.
