Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil or butter
  • 2 apples (Honeycrisp, Fuji, or Gala), thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 2 tablespoons honey
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream (optional)
  • 1 teaspoon fresh thyme or rosemary (plus more for garnish)
  • Salt and black pepper, to taste

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through (165°F/74°C). Transfer to a plate.
  3. In the same skillet, add more oil if needed. Sauté onion and apple slices until softened and lightly caramelized, about 5–7 minutes.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Whisk in Dijon mustard, whole grain mustard (if using), honey, chicken broth, and thyme. Scrape up browned bits from the pan.
  6. Simmer sauce for 2–3 minutes. Stir in heavy cream, if using, for a richer sauce.
  7. Return chicken to the skillet. Spoon sauce and apples over the top and heat for 2–3 more minutes.
  8. Serve garnished with extra thyme and enjoy with your choice of sides.
