Quick and flavorful tacos featuring juicy honey mustard-coated chicken and crunchy, tangy slaw in soft tortillas. A perfect balance of sweet, savory, and fresh in every bite.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp honey
  • 2 tbsp dijon mustard
  • 2 tbsp mayonnaise (divided)
  • 1 tbsp apple cider vinegar
  • 2 cups coleslaw mix
  • 2 green onions, sliced
  • 8 small flour or corn tortillas

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 6–7 minutes per side, or until fully cooked and golden brown. Let rest, then slice or shred.
  3. In a small bowl, mix honey, dijon mustard, and 1 tbsp mayonnaise to make the honey mustard sauce.
  4. Toss the warm chicken with the honey mustard sauce until evenly coated.
  5. In another bowl, combine coleslaw mix, apple cider vinegar, 1 tbsp mayonnaise, and green onions to make the slaw.
  6. Warm tortillas in a dry skillet or microwave until soft.
  7. Assemble tacos by filling each tortilla with honey mustard chicken and topping with slaw.
  8. Serve immediately, garnished with extra green onions if desired.

  • Use rotisserie chicken for a quicker version.
  • Add red pepper flakes or cayenne for a spicy twist.
