Ingredients

  • 1 1/2 cups cooked green or brown lentils
  • 1/2 cup rolled oats or breadcrumbs
  • 1 egg or 1 flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh parsley or dill, chopped
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tbsp olive oil (plus more for brushing)
  • Salt and pepper to taste
  • 1 cup Greek yogurt or dairy-free yogurt
  • 1/2 cup cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint, chopped
  • Salt and pepper to taste (for tzatziki)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse lentils and oats or breadcrumbs until mostly smooth with some texture.
  3. Transfer to a bowl and mix in egg or flax egg, garlic, onion, parsley or dill, oregano, lemon zest, feta (if using), olive oil, salt, and pepper.
  4. Form into 1-inch balls and place on the baking sheet. Brush or spray lightly with olive oil.
  5. Bake for 20–25 minutes, flipping halfway, until golden and firm.
  6. While meatballs bake, combine yogurt, cucumber, garlic, lemon juice, dill or mint, salt, and pepper in a bowl. Mix well and chill until serving.
  7. Serve meatballs warm with tzatziki, in wraps, grain bowls, or over salads.

Notes

  • Use canned lentils (rinsed and drained) to save time.
  • Add chopped sun-dried tomatoes or olives for extra flavor.
  • Make vegan by using flax egg and dairy-free yogurt and feta.
  • Great served in pita wraps, on salads, or with roasted veggies.
  • Freeze baked meatballs and reheat from frozen for quick meals.
