Ingredients

  • 2 cups cold leftover mashed potatoes
  • 1/4 cup all-purpose flour (plus more if needed)
  • 1 large egg
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 tablespoons chopped green onions (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter or oil (for frying)

Instructions

  1. In a large bowl, combine mashed potatoes, flour, egg, cheese, green onions, salt, and pepper. Mix until fully incorporated.
  2. Heat a nonstick skillet or cast iron pan over medium heat and add butter or oil.
  3. Form the potato mixture into ½ inch thick patties using a spoon or scoop.
  4. Place the patties in the hot skillet, flatten slightly if needed, and cook for 3–4 minutes on each side until golden brown and crispy.
