A warm, nourishing kale soup made with simple vegetables and broth, offering a comforting yet light meal that’s soothing, wholesome, and easy to prepare.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 4 cups kale, chopped (stems removed)
  • 5 cups vegetable broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, carrots, and celery; cook until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Add diced potatoes and vegetable broth; bring to a gentle simmer.
  5. Cook for 15–20 minutes, until potatoes are tender.
  6. Stir in chopped kale and continue cooking until wilted and tender.
  7. Season with salt, black pepper, and red pepper flakes.
  8. Finish with lemon juice, adjust seasoning, and serve warm.

Notes

  • Remove tough kale stems for best texture.
  • Mash some potatoes to thicken the soup naturally.
  • Frozen kale can be added directly without thawing.
  • Add beans or chickpeas for extra protein.
