Key West Grilled Chicken with Tropical Citrus Marinade is a zesty, juicy dish featuring chicken marinated in a flavorful blend of citrus juices, garlic, and tropical spices. Grilled to perfection, it’s the perfect taste of summer for any meal.

Ingredients

    • For the marinade:
    • 1/2 cup orange juice (fresh or bottled)
    • 1/4 cup pineapple juice
    • 2 tbsp lime juice
    • 2 tbsp olive oil
    • 3 cloves garlic, minced
    • 1 tbsp honey or brown sugar
    • 2 tbsp soy sauce
    • 1/2 tsp ground cumin
    • 1/2 tsp paprika
    • Salt and pepper to taste

 

  • For the chicken:
  • 4 boneless, skinless chicken breasts or thighs
  • Lime wedges and fresh herbs for serving (optional)

Instructions

  1. In a bowl or zip-top bag, whisk together all marinade ingredients.
  2. Add chicken to the marinade, coating well. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat grill to medium-high heat and oil the grates lightly.
  4. Remove chicken from marinade, letting excess drip off. Grill for 5–7 minutes per side, depending on thickness, until fully cooked and slightly charred.
  5. Let chicken rest for 5 minutes before slicing. Serve with lime wedges and herbs if desired.

Notes

  • Don’t marinate longer than 24 hours due to citrus acids breaking down the meat.
  • Use thighs for extra juicy results—just add a couple more minutes per side on the grill.
  • No grill? Use a grill pan or bake at 400°F (200°C) for 20–25 minutes.
  • Pairs well with coconut rice, grilled veggies, or fruit salsa.
