These layered raspberry Jello cups with creamy vanilla pudding are a fun, colorful, and nostalgic dessert that’s easy to make and perfect for parties. Fruity raspberry gelatin pairs with smooth pudding and optional whipped topping for a light, chilled treat.

Ingredients

  • 1 (6 oz) box raspberry flavored gelatin mix (e.g., Jell-O)
  • 2 cups boiling water
  • 2 cups cold water
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 2 cups cold milk
  • Whipped topping (optional, for garnish)
  • Fresh raspberries or sprinkles (optional, for decoration)

Instructions

  1. In a bowl, dissolve the raspberry gelatin mix in 2 cups boiling water. Stir in 2 cups cold water until fully combined.
  2. Pour the gelatin into clear cups, filling each about halfway. Chill in the refrigerator for about 2 hours or until fully set.
  3. Meanwhile, whisk the vanilla pudding mix with 2 cups cold milk. Let it sit in the fridge for 5 minutes to thicken.
  4. Once the Jello is set, gently spoon or pipe the vanilla pudding on top of the Jello layer in each cup.
  5. Top with whipped topping, fresh raspberries, or sprinkles if desired.
  6. Chill the assembled cups for at least 30 more minutes before serving.

Notes

  • Use a piping bag or spoon pudding slowly to keep clean layers.
  • Try with other gelatin flavors like strawberry, cherry, or peach.
  • Add a top layer of Jello after pudding for a 3-layer version.
  • For a fluffier pudding layer, fold in whipped topping before adding to the cups.
