Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs

  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup powdered sugar (for optional glaze)
  • 2 tbsp milk (for optional glaze)
  • 1 tbsp lemon juice (for optional glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the lemon juice and zest.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 20–25 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan on a wire rack.
  9. For the optional glaze, mix powdered sugar with milk and lemon juice until smooth.
  10. Drizzle glaze over cooled bars, then cut into squares and serve.
