These lemon garlic chicken bites are tender, juicy, and packed with bold flavor. Made with simple ingredients like lemon, garlic, and oregano, they cook quickly and are perfect for weeknight dinners, meal prep, or serving with your favorite sides.

Ingredients

  • 1 pound boneless, skinless chicken breasts, patted dry and cut into 1-inch pieces
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon butter (optional, for extra richness)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Season chicken pieces with oregano, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 2–3 minutes per side until golden brown and cooked through.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in lemon zest and juice, allowing it to bubble for about 1 minute to coat the chicken.
  5. If desired, stir in butter for extra richness. Remove from heat.
  6. Garnish with chopped fresh parsley before serving.

Notes

  • For extra juiciness, use boneless chicken thighs instead of breasts.
  • Add red pepper flakes for a spicy version.
  • Can be grilled instead of pan-fried—skewer and grill for 6–8 minutes.
  • Marinate ahead for deeper flavor.
  • Pairs well with rice, quinoa, roasted veggies, or Greek salad.
