Lemon-Garlic Chicken Pitas with Feta Tzatziki & Roasted Bell Peppers are a Mediterranean-inspired handheld meal packed with bold flavor. Juicy lemon-garlic marinated chicken, sweet roasted peppers, and creamy homemade feta tzatziki are wrapped in warm pita for a fresh, satisfying dinner or lunch.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice + 1 teaspoon zest
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 pita breads or flatbreads

For the Feta Tzatziki:

  • 1 cup Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1/2 cucumber, grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon chopped fresh dill or mint
  • Salt and pepper, to taste

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, zest, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Preheat oven to 400°F (200°C). Spread sliced bell peppers on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 20–25 minutes until tender and slightly charred.
  3. Grill or pan-cook the chicken over medium heat until golden and cooked through, about 5–7 minutes per side. Slice thinly.
  4. In a bowl, combine Greek yogurt, crumbled feta, grated cucumber, lemon juice, garlic, dill or mint, salt, and pepper to make the tzatziki. Mix until creamy and smooth.
  5. Warm pita breads, then assemble each with sliced chicken, roasted peppers, and a generous spoonful of feta tzatziki.
  6. Fold and serve warm or wrap for later.

Notes

  • Swap chicken with grilled shrimp or roasted chickpeas for a vegetarian version.
  • Add lettuce, red onion, olives, or cherry tomatoes for extra crunch and flavor.
  • Spice it up with harissa or chili flakes in the marinade or tzatziki.
  • Best assembled fresh; store components separately in the fridge.
