Ingredients

  • 2 tablespoons culinary lavender buds
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • For the Lemon Lavender Glaze:
  • 1 1/2 cups powdered sugar, sifted
  • 23 tablespoons fresh lemon juice
  • 1/2 teaspoon lavender extract (optional)
  • Purple food coloring (optional)
  • Extra lavender buds and lemon zest, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a small bowl, whisk together flour, cornstarch, and baking powder.
  3. Cream butter, sugar, lemon zest, and lavender on medium speed for 2–3 minutes until light and fluffy.
  4. Mix in the egg until fully combined.
  5. Add dry ingredients and mix on low just until dough forms.
  6. Scoop tablespoon-sized portions and shape into discs. Place on baking sheets 2 inches apart.
  7. Bake for 12–15 minutes or until edges are lightly golden.
  8. Cool on tray for 5 minutes, then transfer to a wire rack.
  9. Whisk glaze ingredients until smooth. Drizzle over cooled cookies and garnish if desired.
  10. Let glaze set for 30 minutes before serving.
