Bright, zesty, no-bake energy bites with lemon, poppy seeds, oats, and almond flour. Sweet, chewy, and packed with natural energy.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour or ground almonds
  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter (almond or cashew)
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp poppy seeds
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: shredded coconut or mini white chocolate chips

Instructions

  1. In a mixing bowl, combine oats, almond flour, poppy seeds, and salt.
  2. In a separate bowl, whisk together nut butter, honey, lemon zest, lemon juice, and vanilla until smooth.
  3. Pour the wet ingredients into the dry and stir until evenly combined. If mixture is too sticky, add a little more almond flour or oats.
  4. Use a spoon or cookie scoop to form small balls, then roll between hands to smooth.
  5. Chill in the fridge for 20–30 minutes to firm up before storing.

Notes

  • Add chia seeds or flaxseed for extra fiber.
  • Mix in mini white chocolate chips or shredded coconut for added flavor.
  • Swap almond butter for cashew butter for a different flavor.
  • Add protein powder for an extra protein boost.
