This Light and Healthy Apple Cake is a naturally gluten-free, flourless dessert made with fresh apples, honey, and oat or almond flour. Moist, gently spiced, and easy to make, it’s the perfect wholesome treat for any time of day.

Ingredients

  • 2 large apples (red or green), peeled and chopped
  • 100 ml water
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 3 tablespoons honey (or maple syrup)
  • ½ cup ground oats or ground almonds
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Instructions

  1. In a saucepan, cook chopped apples with water and cinnamon over medium heat for 5–7 minutes until soft. Mash or blend into a purée.
  2. In a bowl, whisk together eggs, honey, and vanilla extract. Stir in the apple purée.
  3. Add ground oats or almonds, baking powder, and salt. Mix until smooth.
  4. Pour the batter into a greased baking dish.
  5. Bake at 180°C (350°F) for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool slightly before serving. Optionally, top with fresh apple slices or a dusting of cinnamon.

Notes

  • Use almond flour for a richer, nutty flavor.
  • Skip the honey if using very sweet apples.
  • Enhance flavor with spices like nutmeg or cardamom.
  • Fold in apple chunks or chopped nuts for added texture.
  • Delicious served warm with yogurt or chilled from the fridge.
