This Limoncello Mojito is a citrusy, minty cocktail twist on the classic mojito—featuring sweet Italian limoncello, fresh lime juice, white rum, and club soda. It’s bubbly, refreshing, and ready in 5 minutes—perfect for summer sipping or impressing guests!

Ingredients

  • Limoncello
  • White rum
  • 1 tablespoon simple syrup (or to taste)
  • Splash of fresh lime juice
  • Fresh mint leaves
  • Club soda
  • Ice cubes or crushed ice
  • Lime slices and mint sprigs, for garnish

Instructions

  1. Make Simple Syrup (if needed): Stir equal parts hot water and sugar until dissolved. Let cool.
  2. Muddle the Mint: Add mint leaves to a glass and gently muddle to release oils—don’t shred the leaves.
  3. Build the Drink: Fill the glass with ice. Add limoncello, white rum, lime juice, and simple syrup.
  4. Top with Club Soda: Add club soda for fizz. Stir gently to mix.
