A hearty and satisfying meal featuring fluffy baked russet potatoes topped with juicy, seasoned steak bites, melted cheddar cheese, sour cream, and green onions. Comfort food made easy and customizable.

Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt (for rubbing potatoes)
  • 1 lb sirloin steak or ribeye, cut into bite-sized cubes
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp butter (for searing steak)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 425°F (220°C). Scrub and dry the potatoes, then rub with olive oil and salt. Place directly on the oven rack and bake for 45–60 minutes until skins are crisp and insides are tender.
  2. While the potatoes bake, season steak bites with garlic powder, paprika, salt, and black pepper.
  3. In a hot skillet with butter, sear steak bites for 2–3 minutes per side until browned and cooked to desired doneness. Remove from heat and let rest.
  4. Once potatoes are baked, slice them open and fluff the insides with a fork. Add a bit of butter and top with shredded cheddar cheese to melt.
  5. Top each potato with steak bites, a dollop of sour cream, and a sprinkle of green onions.
  6. Serve hot and enjoy.
