Low-carb Tuscan chicken is a rich and creamy one-skillet dish made with tender chicken breasts, sun-dried tomatoes, spinach, garlic, and Parmesan in a luscious cream sauce. It’s full of Italian flavor and perfect for keto or low-carb diets.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes (in oil), drained and chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat oil or butter in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant (about 30 seconds).
  4. Add chicken broth and heavy cream, scraping up browned bits from the pan.
  5. Stir in Parmesan cheese and sun-dried tomatoes. Simmer until the sauce thickens slightly.
  6. Add spinach and cook until wilted.
  7. Return chicken to the skillet and spoon sauce over top. Simmer 3–5 minutes until heated through.

  • Add mushrooms or zucchini for extra vegetables.
