Ingredients

  • 1 mango, diced
  • 1 medium avocado, diced
  • 1 small red onion, chopped
  • 1 red pepper, chopped
  • 1 jalapeño, sliced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro or parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Dice mango and avocado; place in a medium bowl.
  2. Chop red onion and red pepper; add to the bowl.
  3. Slice jalapeño and finely chop cilantro or parsley; mix in.
  4. Add lime juice, then season with salt and pepper.
  5. Gently toss to combine, being careful not to mash avocado.
  6. Serve immediately or store in the fridge for up to 2 days.
