The toasted pecans and real maple syrup make it a fall favorite that’s as delicious as it is beautiful.

Ingredients

  • For the maple pecan granola:
  • Rolled oats
  • Chopped pecans
  • Pure maple syrup
  • Coconut oil or butter (melted)
  • Ground cinnamon
  • Salt
  • Vanilla extract
  • For the parfait layers:
  • Plain or vanilla yogurt (dairy or non-dairy)
  • Fresh fruit (berries, apples, bananas)
  • Additional maple syrup (optional, for drizzling)

Instructions

  1. Make the granola: Preheat oven to 325°F. Line a baking sheet with parchment paper. Mix oats, pecans, cinnamon, and salt in a bowl. In another bowl, combine melted coconut oil, maple syrup, and vanilla. Pour over dry ingredients and toss to coat.
  2. Bake the granola: Spread mixture on the baking sheet. Bake for 25–30 minutes, stirring once halfway. Cool completely to crisp.
  3. Assemble the parfait: In a glass or bowl, layer yogurt, granola, and fruit. Repeat for additional layers.
  4. Top and serve: Finish with more granola, fruit, and an optional drizzle of maple syrup.

Notes

  • Texture boosters: Add chia seeds, flaxseeds, or shredded coconut to granola.
  • Fall twist: Add sautéed apples or pears between layers.
  • Dairy-free: Use almond, oat, or coconut yogurt.
  • Flavor boost: Add a dash of pumpkin pie spice to granola for extra autumn vibes.
