Marry Me Chicken Pasta is a rich and creamy pasta dish featuring seared chicken breasts and a sun-dried tomato parmesan cream sauce tossed with pasta. It’s comforting, flavorful, and perfect for date night or a weeknight treat.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
  • 1/2 cup grated parmesan cheese
  • 12 oz pasta (penne, fettuccine, or spaghetti)
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and let rest, then slice.
  3. In the same skillet, sauté garlic and red pepper flakes (if using) until fragrant.
  4. Deglaze the pan with chicken broth, scraping up brown bits.
  5. Add heavy cream and sun-dried tomatoes. Simmer until slightly thickened.
  6. Stir in parmesan cheese until melted and smooth.
  7. Meanwhile, cook pasta according to package instructions. Drain and add to the sauce.
  8. Return sliced chicken to the skillet. Toss everything together and simmer for another 1–2 minutes.
  9. Garnish with fresh basil or parsley and serve warm.

Notes

  • Use chicken thighs instead of breasts for a juicier option.
  • Add spinach or arugula for extra greens.
  • Swap chicken with mushrooms or cauliflower for a vegetarian version.
  • For lighter sauce, use milk or half-and-half instead of cream.
  • Great with gluten-free or whole wheat pasta alternatives.
