Marry Me Chicken & Ravioli is a rich and creamy dish featuring seared chicken breasts and cheese ravioli in a sun-dried tomato parmesan cream sauce. Perfect for a cozy weeknight dinner or a special romantic meal.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
  • 1/2 cup grated parmesan cheese
  • 9 oz cheese ravioli (fresh or refrigerated)
  • Fresh basil, for garnish (optional)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic and red pepper flakes (if using) until fragrant.
  4. Pour in chicken broth and scrape up browned bits. Add heavy cream and sun-dried tomatoes, stirring to combine.
  5. Simmer sauce until slightly thickened. Stir in parmesan cheese until melted and smooth.
  6. Cook cheese ravioli according to package instructions. Drain well.
  7. Return chicken to the pan and add cooked ravioli. Simmer for 1-2 minutes to heat through.
  8. Garnish with fresh basil and serve warm.

Notes

  • For a vegetarian version, omit chicken and add sautéed mushrooms or spinach.
  • Use tortellini as an alternative to ravioli.
  • Half-and-half can be used instead of heavy cream for a lighter sauce.
  • Store leftovers in the fridge for up to 3 days; reheat gently with a splash of broth or cream.
  • Do not freeze as the cream sauce may separate.
