Meatballs with Potatoes and Cheese is a hearty, comforting one-pan meal featuring juicy homemade meatballs, crispy roasted potatoes, and a blanket of melty cheese. It’s budget-friendly, satisfying, and perfect for both family dinners and meal prep.

Ingredients

    • For the meatballs:
    • 1 lb ground beef or a mix of beef and pork
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan
    • 1 egg
    • 2 cloves garlic, minced
    • 1 tablespoon chopped parsley
    • Salt and pepper, to taste

 

  • For the rest:
  • 4 medium potatoes, peeled and chopped into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 to 1 1/2 cups shredded mozzarella or cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Mix until just combined.
  3. Form mixture into 1 to 1.5-inch meatballs and set aside.
  4. In another bowl, toss potatoes with olive oil, paprika, oregano, salt, and pepper.
  5. Spread potatoes on a baking sheet and roast for 15 minutes.
  6. Add meatballs to the pan with potatoes and bake for 20–25 minutes, until meatballs are cooked through and potatoes are tender.
  7. Sprinkle cheese over the top and bake for another 5 minutes until melted and bubbly.
  8. Let rest for a few minutes before serving.

Notes

  • Swap in sweet potatoes for a different flavor.
  • Add bell peppers or onions for extra color and taste.
  • Use chili powder in meatballs or pepper jack cheese for spice.
  • Stir in spinach or kale before adding cheese for added greens.
  • Use frozen meatballs for convenience, adjusting cook time as needed.
