Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/3 cup kalamata olives, sliced
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • Optional: warm pita bread for serving

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment.
  2. Mix olive oil, paprika, garlic powder, oregano, salt, and pepper. Rub onto chicken breasts and bake for 25–30 minutes until cooked through. Let rest 10 minutes, then slice.
  3. In a saucepan, bring 2 cups water to a boil. Add rinsed quinoa, reduce heat, cover, and simmer for 15 minutes. Fluff with fork.
  4. In a bowl, combine cucumber, cherry tomatoes, red onion, olives, and feta.
  5. Whisk lemon juice, red wine vinegar, olive oil, salt, and pepper to make the dressing. Toss with the veggie mix.
  6. Assemble bowls with quinoa, sliced chicken, and veggie mix. Sprinkle with parsley and serve with pita if desired.

Notes

  • Swap quinoa with couscous, farro, or cauliflower rice.
  • Add hummus or tzatziki for creaminess.
  • Use falafel, grilled tofu, or chickpeas for a vegetarian option.
  • Grilled chicken adds extra smoky flavor.
