Mediterranean Cod with Lemon Herb Sauce and Green Beans

A light and fresh Mediterranean-style cod dish served with a bright lemon herb sauce and tender roasted green beans for a healthy, satisfying meal.

Ingredients

  • 1 1/2 lb cod fillets
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill or oregano, chopped
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 lb green beans, trimmed
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss green beans with 1 tbsp olive oil, salt, and black pepper and spread on a baking sheet.
  3. Place cod fillets on the same or a separate baking sheet and drizzle with 1 tbsp olive oil.
  4. Season the cod with salt and black pepper.
  5. Bake for 12–15 minutes, until the cod is opaque and flakes easily and the green beans are tender.
  6. In a bowl, mix remaining olive oil, garlic, lemon juice, lemon zest, parsley, dill or oregano, and red pepper flakes if using.
  7. Spoon the lemon herb sauce over the cod just before serving.
  8. Serve the cod alongside the roasted green beans.

Notes

  • Pat cod dry before cooking for best texture.
  • Add cherry tomatoes or olives for extra Mediterranean flavor.
  • Finish with an extra squeeze of lemon before serving.
  • Reheat gently to avoid drying out the fish.
