A fresh, zesty, and protein-packed salad featuring tender chicken, crisp veggies, and creamy homemade tzatziki. It’s a Mediterranean-inspired dish that’s light, flavorful, and perfect for meal prep or casual meals.

Ingredients

  • 2 cups cooked chicken breast or thighs, chopped or shredded
  • 1/2 cucumber, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely diced
  • 1/3 cup Kalamata olives, sliced (optional)
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp fresh dill or parsley (for garnish)
  • 2 cups romaine or mixed greens (optional, for serving)

Tzatziki Dressing:

  • 3/4 cup Greek yogurt
  • 1/3 cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the tzatziki by mixing Greek yogurt, grated cucumber (squeezed dry), garlic, lemon juice, olive oil, dill, salt, and pepper. Chill in the fridge while prepping the salad.
  2. In a large bowl, add cooked chicken, chopped cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  3. Pour the chilled tzatziki over the salad mixture and toss until evenly coated.
  4. Serve over greens, in pita pockets, or on its own. Garnish with extra dill or parsley if desired.

  • Use rotisserie chicken for quicker prep.
  • Drain grated cucumber well to avoid watery dressing.
  • Add roasted red peppers or avocado for extra flavor.
