Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 2 cups fresh spinach or baby spinach
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add ground chicken, season with salt, pepper, oregano, and red pepper flakes if using. Cook until browned and cooked through.
  4. Add cherry tomatoes and cook until softened, about 3–4 minutes.
  5. Stir in spinach and cook until just wilted.
  6. Mix in olives and lemon juice, then sprinkle feta cheese on top.
  7. Simmer for 1–2 minutes, then serve hot.
